<p>Chicken Cordon Bleu is a classic that involves chicken breast that is rolled around (or topped with) ham and swiss cheese, then breaded and fried or baked. And yes, it&#8217;s delicious. Rich, a little salty, a little crunchy, and a little creamy&#8230;it hits so many high notes!</p>
<p>I have a little confession, though&#8230; I&#8217;ve never actually made chicken cordon bleu the traditional way. I mean, I&#8217;ve eaten it many times and know that I love the flavor profiles in it, but for whatever reason I&#8217;ve never actually cooked the stuff. Maybe I&#8217;ll give it a try one day. Or, maybe I&#8217;ll take the easy way out and make this Chicken Cordon Bleu Casserole instead!</p>
<p>Seriously, when I say easy, I&#8217;m not kidding. The hardest thing about this recipe is shredding the chicken. It&#8217;s the perfect weeknight meal that even my toddlers gobble up. Oh, and speaking of gobble (see what I did there?), this recipe is the perfect way to use up leftover turkey or ham from the holidays! Just sub the turkey for the chicken, and/or dice the ham into small chunks!</p>
<p>You can also feel free to mix up the veggie game here. I like adding broccoli because my family loves it, the flavors compliment each other, and it lets me cook a complete meal without having to worry about making an extra side if I am not up for it (although I usually serve this with a side salad). If you&#8217;re family isn&#8217;t in to broccoli, use peas or whatever they prefer instead! Or, leave the veggie out of the casserole itself and cook something on the side. It&#8217;s up to you!</p>
<h3>How to Make Chicken Cordon Bleu with Broccoli Casserole:</h3>
<p>Start off by cooking your instant rice according to the package directions. The typical method is to boil slightly salted water, add in the rice, cover, remove from the heat, and let it sit for 5 minutes. If you prefer a different type of rice, feel free to use it!</p>
<p>While the rice is doin its thing, mix together all of the other ingredients, reserving about half a cup of the shredded cheese. I generally add the broccoli in last and gently fold it in so that it doesn&#8217;t all break apart. Once the rice to done, add it to the mixture (no need to cool). Pour the mixture into a greased 13&#215;9 pan, top with the rest of the cheese, and bake at 350 degrees for 20-25 minutes until the cheese is melted and bubbling!</p>

<p>It’s happened, friends. My oldest baby isn’t a baby any more and has started pre-school AND dance class. Plus, JW has started fall harvest and I’ve started prepping for VandeLittle #3. In other words, our normally crazy life has just gotten way, way crazier. And it ain’t going to slow down any time soon.</p>
<p>Enter my salvation in the form of my trusty slow cooker! I honestly don’t know what I’d do without it! I love just dumping everything in the crock pot and forgetting about it until it’s time to eat.</p>
<p>This Crock Pot Chicken Pasta with Creamy Tomato Sauce is one of those meals that require very little prep to get started. Just dump and go! Then, about 20 minutes before dinner time, preheat your oven to bake some garlic bread, cook and drain some pasta, shred the chicken (which honestly pretty much shreds itself because it ends up being so tender), and add the last couple of ingredients. <h2>How to Make Crock Pot Chicken Pasta with Creamy Tomato Sauce:</h2>

<p>Spread a little of your favorite jarred (or homemade if you’ve got it!) marinara sauce on the bottom of your crock pot. Add in chicken tenders, diced onion, minced garlic (I like to use a garlic press), the rest of the jar of marinara, and the cream cheese. Throw in a couple of bay leaves, some Italian Seasoning, a little crushed red pepper flakes (or a lot, depending on your love of spice), and some salt and pepper. Put the lid on your crock pot and cook on high for about 3 hours, or on low for about 6.</p>
<p>When it’s almost time for dinner, cook the pasta of your choice according to the package directions (I like to use Cellentani, which is like a thin tube/corkscrew), making sure to salt your water. While the pasta is cooking, remove the chicken from the crock pot and shred it, then add it back in. Chop some spinach and some fresh basil, and throw that in the crock pot at well, giving everything a good stir until the cream cheese is blended in and the spinach starts to wilt. If the cream cheese isn’t fully smooth, don’t panic! It’ll be fine once you add the pasta, which you should do once it’s done cooking and been drained. Give everything a good stir, taste for seasoning, and serve topped with some shredded mozzarella and/or parmigiana.</p>

<p>Ah, summertime, how I love you. Well&#8230;most years anyway. This year has been a little rough because, thanks to pregnancy number two, it&#8217;s like I&#8217;ve got my own little built in furnace happening. But most years, summer is one of my absolute favorite times of year, second only to spring. Bring on that sunshine!</p>
<p>Cookouts, lake/pool life, refreshing summer cocktails and cold beer (well, not this year, but usually), cow shows and county fairs, longer days, and of course delicious fresh veggies from the garden! I was able to get a garden in for the first time in a couple of years, and we&#8217;ve been in veggie heaven all summer long!</p>
<p>I love taking advantage of what&#8217;s in season when cooking dinner. It just seems like everything tastes better that way. So, this time of year (late summer) is my favorite time to make this Summer Vegetable Angel Hair. It uses all of the wonderful things coming from the garden right now (zucchini, yellow squash, sweet corn, and tomatoes if you want them), and brightens it all up with some lemon and basil.</p>

<p>The inspiration for this particular recipe comes from one of my all-time favorite bloggers and cooks, The Pioneer Woman. Seriously, ya&#8217;ll, her food is amazing and perfect for manly, simple eaters and more adventurous types alike. Her Summer Stir Fry is made with a lot of the ingredients I mentioned above, but she uses shrimp and her recipe doesn&#8217;t have a starch built in. JW doesn&#8217;t care for shrimp, so I subbed chicken, and as we all know I&#8217;m pasta obsessed so I decided to toss everything with angel hair. A couple other tweaks here and there and we&#8217;ve got this super tasty, healthy, and easy dish!</p>
<p>Oh, and if you&#8217;re of the vegetarian persuasion, it&#8217;d be really easy to make this dish vegetarian! Just leave out the chicken and sub vegetable stock for the chicken broth. Don&#8217;t you just love versatile recipes?</p>

<h2>How to Make Summer Vegetable Angel Hair:</h2>
<p>I like to start out by getting everything, or as much of everything as possible, sliced and diced because once you start cooking, things move pretty quickly. So, get your pasta pot on the stove with plenty of water and salt and get it boiling. Then, dice the chicken and set aside. On a different cutting board with a clean knife, chop up the zucchini and squash, as well as any other veggies you want to add (I like to do some diced asparagus if I can find some that looks good. You might also like tomatoes, but JW doesn&#8217;t so I leave those out).</p>
<p>At this point you can heat some olive oil and butter in a large skillet, and start to brown the chicken. Season it with plenty of salt and a little Lowry&#8217;s Lemon Pepper if you&#8217;ve got it. The goal here is just to get some color on the chicken; it&#8217;s ok if it isn&#8217;t completely cooked through. While the chicken is browning, slice the kernels off of the ears of corn and mince the garlic.</p>
<p><em><b>Pro Tip: for a mess free way to slice corn kernels off of ears, take a large bowl or cake pan, and place a smaller bowl upside down in it. Placing the flat end of the corn on the smaller bowl, run your knife down the ear. Once the kernels are off of the ear, I also like to run my knife up the ear the opposite way to get some of the juices.</b></em></p>
<p>Once the chicken has browned, use a slotted spoon to remove it from the skillet and set it aside. Add the zucchini, squash, and then the garlic to the hot skillet. Stir around for a second, then add in the corn. If you&#8217;re using asparagus or tomatoes, add those as well. Cook for another few seconds (not too long!) then add the chicken broth. Scrape the bottom of the pan to get up any browned bits, and add the chicken back in. Squeeze in the lemon juice and add some of the basil.</p>
<p>When the pasta is ready, add it along with a little of the pasta water to the skillet, and toss with the veggies and chicken. Pull it off of the heat and add a little of the parmigiana and a little salt. Taste for seasoning, adding more salt or lemon juice as needed. To serve, put it in bowls and top with a little more basil and parm.</p>

<p>Let&#8217;s talk about how much my husband loves Mexican food. The guy could eat Mexican, or Mexican-inspired food, every night of the week if I felt inclined to do the same. In the early days of our relationship, before I started cooking for him on a regular basis, it was not uncommon to open his freezer and find multiple varieties of frozen burritos, taquitos, and enchiladas hanging out in there. If our weekly out-to-dinner night always consisted of Mexican, there would be absolutely no complaints from him. Than man loves him some tacos and quesadillas. Who can blame him?</p>
<p>This is not to say that I don&#8217;t also love Mexican food; I do! Just&#8230;.not with quite the same passion and loyalty that JW feels for it. I think that&#8217;s why I&#8217;m always looking for a way to put a spin on what we typically think of as Mexican cuisine (in the States, anyway). Sometimes you just need a little more than bell peppers and avocado in your life, you know what I mean?</p>
<p>And yes, I know that actual authentic Mexican cuisine is very diverse, fresh, and healthy. And insanely delicious. What I&#8217;m referring to here is the Americanized version that we&#8217;ve been fed over the years. Tasty? Yes. But to me that version of things gets a little old after a while.</p>
<p>These Creamy Chicken Enchiladas are the perfect compromise in my mind. JW still gets his &#8220;Mexican&#8221; flavor, and I get a creamy, delicious, slightly different spin on things. If I happen to be making dinner for my little brother, this is the meal he requests. And thanks to a rotisserie chicken, they&#8217;re super easy, too!!</p>
<p>They also freeze well! Just put everything together, but don&#8217;t bake. Cover with foil and freeze! Pull out of the freezer and let defrost, then bake like normal!</p>

<h2>Ingredients Needed for Creamy Chicken Enchiladas:</h2>
<ul>
<li><strong>Shredded Chicken.</strong> Unless I have extra cooked chicken from another recipe, I just pick up a rotisserie chicken from the store!</li>
<li><strong>Fresh Spinach</strong></li>
<li><strong>Sliced Garlic</strong></li>
<li><strong>Olive Oil</strong></li>
<li><strong>Sour Cream</strong></li>
<li><strong>Milk.</strong> I always use whole milk.</li>
<li><strong>Canned Diced Green Chiles.</strong></li>
<li><strong>Green Onions</strong></li>
<li><strong>Ground Cumin</strong></li>
<li><strong>Mozzarella</strong></li>
<li><strong>Flour Tortillas</strong></li>
<li><strong>Salt</strong></li>
<li><strong>Fresh Cilantro and Green Onions, optional</strong></li>
</ul>
<h2>How to make Creamy Chicken Enchiladas:</h2>
<p>Heat some olive oil in a pan and throw in some sliced (not minced! actual slices here) garlic.</p>
<p>Let those cook for a minute or two until they become fragrant&#8211;the point is just to flavor the oil a little-, then remove the garlic with a slotted spoon and throw in your spinach with a touch of salt. Cook the spinach until it&#8217;s just starting to wilt, then put it in a strainer in the sink and allow it to drain a little.</p>
<p>In a small bowl, combine the sour cream, milk, green onions and chiles, cumin, a large handful of cheese, and salt and pepper. In a separate, larger bowl, combine the shredded chicken (if you are using a whole rotisserie chicken, it amounts to a little over half of the meat that&#8217;s on the bird) with the drained spinach and about half of the sauce.</p>
<p>Now it&#8217;s time to build your enchiladas! I like to start by spraying my glass baking dish with a little non-stick cooking spray, then putting a little bit of the sauce on the bottom to prevent sticking. Fill your taco-sized flour tortilla with about 2 tablespoons-ish of the chicken/spinach/sauce mixture, roll (no need to fold the ends), and place seam side down in the baking dish. Repeat until you can&#8217;t fit anymore in the dish/you run out of filling.</p>
<p>Smother the filled tortillas in every last bit of the creamy deliciousness that is the sauce. Then top that with the rest of the shredded cheese. Hello, beautiful. Bake at 350 for about 30 minutes, or until the cheese melts and becomes bubbly. If you want, you can top with some more green onion and cilantro. En. Joy.</p>

<p>Some days you just need something crisp and fresh to eat, you know what I mean? Summer has definitely moved in and made itself right at home here in Indiana, and the last few days have been HOT. To be honest, the heat usually doesn&#8217;t bother me. In fact, I absolutely love warm weather. I live for the sun and am one of those that covers up with a warm blanket anytime I sit on the couch, no matter if its 30 degrees or 80 degrees outside. You&#8217;ve heard of hangry? Well, I get cangry; if I&#8217;m cold, chances are I&#8217;m not in a good mood.</p>
<p>JW is the exact opposite of me. He lives for cool, crisp temperatures, loves sleeping in a freezing cold bedroom (I&#8217;ll never understand it), and complains about it being too hot out when the mercury hits 70 degrees. He&#8217;s a walking furnace. I&#8217;m always freezing. What can I say? It works. Or, at least it does until I go into the bedroom in the dead of winter and have to shut the windows because he&#8217;s opened them. Ask me then and I won&#8217;t be so sure it&#8217;s working. (I kid, of course!! &#8230;kind of&#8230;)</p>
<p>Since we both spend most of our time outdoors or in a barn, summertime means lots of meals that require little effort and heating up of the kitchen. It also means lots of big salads. These Chicken Fajita Salads are the perfect answer. Loaded with tasty veggies, full of protein to fill us up, and easily to customize to everyone&#8217;s taste, they make a perfect summer (or any time of year that you&#8217;re craving a little fresh in your life) dinner option! Plus, the Cilantro Lime Ranch is super easy and goes wonderfully on basically anything!</p>

<p>I always go ahead and get the ranch mixed up first because I find that it&#8217;s better if it has a little time to sit in the fridge and thicken/let the flavors meld a little. Simply mix together Greek yogurt, mayo, milk, lime juice, onion powder, garlic powder, dried parsley, dried chives, salt, pepper, a little dried dill, and some cilantro. You can buy fresh cilantro and chop it finely, but I just love those little cups of &#8220;lightly dried&#8221; herbs you can find next to the fresh herbs at your grocery store. They last a lot longer and the chopping is already done for you!</p>
<p>Next, saute some bell peppers and onions in a little olive oil on the stove. Season with salt and cumin, and let them cook until they&#8217;ve softened and the onions have gone pretty translucent. In the meantime, prep your chicken breasts. I love to buy the thin sliced breasts and pound them down a little more between a couple of sheets of plastic wrap&#8230;the thinner the better in my book. If I can&#8217;t fine the pre-packaged thin sliced ones, I just buy regular chicken breasts and butterfly them, them pound them out a little. Season both sides with salt and some <a href="https://www.amazon.com/gp/product/B0070S8EN0/ref=as_li_qf_asin_il_tl?ie=UTF8&amp;tag=thecrossroa0d-20&amp;creative=9325&amp;linkCode=as2&amp;creativeASIN=B0070S8EN0&amp;linkId=6b9848e0c433c8da503610b078c70756" target="_blank" rel="noopener noreferrer">Lawry&#8217;s Lemon Pepper</a>. Yep, I said lemon pepper! Combine some butter and olive oil in a non-stick skillet, and brown the chicken on both sides. Since they&#8217;re thin, they&#8217;ll only take a few minutes one either side. I love cooking big batches of this chicken and using it for lunches&#8211;wraps and salads&#8211;through the week!</p>
<p>While everything is cooking, build your salad. I love to mix lettuces (usually hearts of romaine for some crunch and spring mix for the health factor). Then I use diced green onions, cherry tomatoes, shredded cheese (pick your poison here&#8230;I usually go for Colby Jack, but Pepper Jack would be awesome if you like some heat), and avocado. Use what ever veggies float your boat. Corn, cucumbers, black beans&#8230;go to town. For JW, I always put some crunched up tortilla chips on his. If you wanted to make this a vegetarian-friendly meal, you could easily substitute black beans for the chicken. Then. put a tasty helping of the peppers and onions on, as well as some of the chicken that&#8217;s been sliced. Drizzle on some of that creamy ranch dressing, and you&#8217;re done!</p>

Once the chicken is seasoned, brown it on both sides in a non-stick skillet in a little olive oil and butter (optional) until the chicken is cooked through. <p class="p1"><span class="s1">I don’t think it’s any secret that I’m obsessed with Italian food and wine. Part of this obsession stems from La Scala, this amazing little chef-owned Italian restaurant that I worked at while I was in college. When I say amazing, I’m not exaggerating. The food there is to. die. for. Not only is it the place that taught me to love real Italian food, but it’s the place that taught me how to love wine. Up until I started working there, I thought Boone’s Farm was the real deal…yeah.</span></p>

<p class="p1"><span class="s1">I now live far enough away from Lafayette that I haven’t been to my favorite place in a couple of years, but that doesn’t mean that I don’t still crave their food now and then! It was during one of these fits of craving that I decided to recreate one of their dishes, Miguel Angelo, and now I’m sharing the result with you! This delicious pasta dish has a very light sauce, but thanks to all of the goodies in it, it’s super hearty, flavorful, and filling. It has quickly become one of my family’s favorites…even my toddler loves it!</span></p>
<p class="p1"><span class="s1">My version is slightly different than the original. They add a touch of their special marinara to the sauce, but I can’t recreate their marinara. When I tried adding a bit of my favorite jarred sauce to the pasta, it really didn’t taste great. So, I left it out of the recipe. The other is that since I don’t have a commercial-grade broiler, and…let’s be honest…I’m usually in a rush to get dinner on the table, I don’t generally take the time to melt the cheese on top. I just kind of throw it on there as I dish it up and let it melt on its own. At La Scala, they put it under a salamander and let the cheese get bubbly and gorgeous. If you want to take the time to do the same with your home oven broiler, feel free!</span></p>

<p class="p1"><span class="s1">I like using sweet Italian sausage links in my recipes that call for sausage. I just cut a slit in the casing and squeeze out chunks of sausage. That way, if I don’t use all of the links, I can just freeze the rest to use at a later time. If you would rather use the loose ground stuff, feel free! It’ll taste just the same. Oh, and if you like it a little hot, go for hot Italian Sausage!</span></p>
<p class="p1"><span class="s1">Ok, enough with the blabbering already. Let’s make some PASTA!</span></p>
<p class="p1"><span class="s1">Cook the fettucine according to package directions, making sure to adequately salt the water (the Italians say it should be salty like the sea) and reserve a about a cup of pasta water when it’s done cooking.</span></p>
<p class="p1"><span class="s1">In the meantime, add a touch of olive oil to a large skillet. Break the sausage into little bite-sized pieces and brown them.</span></p>

<p class="p1"><span class="s1">Toss the cubed chicken in a little flour and salt, and add it to the pan to brown. Remove the meat from the pan with a slotted spoon and set it aside. It’s ok if it isn’t all the way cooked through; it will cook a little more in the sauce later.</span></p>
<p class="p1"><span class="s1">In the same pan, sauté your onions, making sure to add a pinch of salt, until they start to turn translucent. Add the bell peppers (notice that in the pictures I used yellow instead of green…it’s what I had. Green bell peppers are slightly stronger in flavor, so I suggest using them, but the sweeter red, yellow, or orange work just fine, too), mushrooms, and garlic. Stir and cook for about a minute or so, then deglaze the pan with the white wine. Deglaze simply means to add the wine to the pan while it is at medium high heat while scrapping the bottom of the pan to get all of the brown bits off of the bottom. Brown bits = FLAVOR! Once the wine has cooked for a couple of minutes and reduced down a bit, add the chicken broth. Add the meat back to the pan and let cook for a minute or two, then check the seasoning; if it needs a little more salt, add it.</span></p>

<p class="p1"><span class="s1">Once the sauce has started to thicken slightly, add the cooked fettuccine and about a ½ cup of the pasta water, along with the spinach. Toss all of this together. If it’s looking a little dry, feel free to add a touch more pasta water. Give it a taste and adjust seasonings.</span></p>
